Rojo Cocoa Red Chile Spice Mix:

People whom I respect told me that I needed
a red chile version of a rub/spice mix.  Green chile is my favorite and I much prefer it to red chile; in spite of that, I think Rojo Cocoa is a great choice (for red).  I patterned it after old Mexico's mole, which combines red chile and cocoa in a flavorful sauce. 

Rojo Cocoa includes cocoa, cloves, corriander, and cinnamon, as well as other spices.  Its a fabulous complement to all meat, but I must say pork tenderloin is hard to beat when marinated and cooked in Rojo Cocoa - be
brave and try it.  I did, and I like it!!
